Ah! The cozy Winter-inspired breakfasts continue and this one tastes like a hug in a bowl. Quick and easy enough to whip up during busy weekday mornings, it’s the perfect healthy start to your day!
This recipe is vegan, refined sugar free and gluten free (although that depends on the type of oats that you use).
Place the apples and water in a saucepan, add a dash of cinnamon. Bring to the boil. Reduce heat to low. Simmer, covered, for 8-10 minutes or until apple is tender.
In a separate little pot/pan, mix the oats, cinnamon, ginger, pinch of salt and add the water. Bring to the boil, stir in the honey/ maple syrup, then boil for 5-7 minutes, until oats are thick and creamy. Remove from the heat (that’s basically just a fancy way of saying cook the oats on the stove).
Split the oats between two bowls and add the apples (a splash of warmed plant-based milk is optional).
Top with coconut flakes, seed mix (or nuts if you’d like) and a last drizzle of honey.
